(Otherwise known as Beef Bourguignon)
This classic French Beef Stew is the ultimate comfort food. After a few hours in the oven, the meat becomes perfectly tender with big flavours.
INGREDIENTS
3 pounds beef
Salt
Ground black pepper
Olive oil
2 medium yellow onions, cut into chunks
3 cloves garlic, peeled and smashed
A splash of balsamic vinegar
1 tablespoon tomato paste
1/4 cup all-purpose flour
1 cup dry red wine
2 cups beef broth
1 cup water
1/2 teaspoon sugar
4 large carrots, peeled and cut into 1-inch chunks on a diagonal
3 large potatoes
INSTRUCTIONS
1. Preheat the oven to 150°F.
2. Pat the beef dry and season with salt and pepper. In a large frying pan, heat 1 tablespoon of olive oil over medium-high heat until hot and shimmering. Brown the meat, turning with tongs. Set the beef aside and lightly dust with flour. Add olive oil and garlic to the frying pan and gently heat for one minute. Add the beef back to the frying pan and stir for one minute. Transfer the meat and garlic to your roasting pan.
3. Add the onions, carrots, potatoes, balsamic vinegar, tomato paste, wine, beef broth, water, and sugar. Cover the pot with a lid, transfer to the preheated oven, and slowly roast for 4/5 hours.
4. This French stew improves in flavour if made at least 1 day ahead.
