Epic Fish Pie

For the fish pie:

  • 1kg potatoes, ideally Maris Pipes, peeled and chopped
  • 150g butter
  • salt and pepper to taste
  • 500g mixed seafood (such as salmon, cod, and prawns)
  • 120ml white wine
  • 120ml heavy cream
  • 60g butter
  • 60g plain flour
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1 cup frozen peas
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh dill
  • 1 tbsp capers
  • salt and pepper to taste
  • 120g grated cheddar cheese

Instructions:

  1. Preheat your oven to 200°C,gas mark 5.
  2. Bring a large saucepan of salted water to a boil. Add the potatoes and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
  3. Mash the potatoes with a potato masher or use a ricer until smooth. Stir in the milk, butter, salt, and pepper. Mix until well combined and the mashed potatoes are creamy, set aside.
  4. In a large saucepan, melt the butter over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  5. Stir in the flour and cook for 1-2 minutes.
  6. Add the white wine and bring the mixture to a boil, stirring constantly.
  7. Reduce the heat to low and add the heavy cream, lemon juice, dill, salt, and pepper. Stir until well combined.
  8. Add the mixed seafood, frozen peas, and capers to the sauce and combine.
  9. Transfer the mixture to a large baking dish.
  10. Using either a piping bag or a fork, spread the mashed potatoes over the top of the fish pie.
  11. Sprinkle the cheese over the top of the mashed potatoes.
  12. Bake the pie in the preheated oven for 35-45 minutes, or until the top is golden brown.
  13. Serve hot and enjoy!
