For the fish pie:
- 1kg potatoes, ideally Maris Pipes, peeled and chopped
- 150g butter
- salt and pepper to taste
- 500g mixed seafood (such as salmon, cod, and prawns)
- 120ml white wine
- 120ml heavy cream
- 60g butter
- 60g plain flour
- 1 small onion, chopped
- 1 garlic clove, minced
- 1 cup frozen peas
- 1 tbsp lemon juice
- 1 tbsp chopped fresh dill
- 1 tbsp capers
- salt and pepper to taste
- 120g grated cheddar cheese
Instructions:
- Preheat your oven to 200°C,gas mark 5.
- Bring a large saucepan of salted water to a boil. Add the potatoes and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
- Mash the potatoes with a potato masher or use a ricer until smooth. Stir in the milk, butter, salt, and pepper. Mix until well combined and the mashed potatoes are creamy, set aside.
- In a large saucepan, melt the butter over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Stir in the flour and cook for 1-2 minutes.
- Add the white wine and bring the mixture to a boil, stirring constantly.
- Reduce the heat to low and add the heavy cream, lemon juice, dill, salt, and pepper. Stir until well combined.
- Add the mixed seafood, frozen peas, and capers to the sauce and combine.
- Transfer the mixture to a large baking dish.
- Using either a piping bag or a fork, spread the mashed potatoes over the top of the fish pie.
- Sprinkle the cheese over the top of the mashed potatoes.
- Bake the pie in the preheated oven for 35-45 minutes, or until the top is golden brown.
- Serve hot and enjoy!
