• 400g raw prawns
• 50g butter
• 2 garlic cloves
• 1 whole red chilli, chopped
• 1 tbsp coriander, chopped
• 1 bag mixed leaf salad
• 60g feta, cubed
• 20g crispy onions
1 Melt the butter in a small saucepan.
2 Add the chilli and garlic and cook for 2 minutes.
3 Grill or barbecue the prawns until pink and cooked through.
4 Add these to the hot butter mixture and cook through for 2 minutes.
5 Layer the salad on a plate with the feta and crispy onions on top. Add the chilli and garlic butter prawns on the side and enjoy!
