Asian Style Soy & Spice Steak

Ingredients:

Marinade:
1 Red chilli
2 Lemongrass stalks
1 cm Ginger
1 Garlic clove
2 Spring onions
8 tbsp Soy sauce
Juice & zest of 1 lime
Coriander
2 tbsp Olive oil

Other:
Miso
Jersey royals
Lemon juice
Tempura flour
Soda water
Sesame seeds
Tenderstem broccoli
Spring onion
Red pepper
Kale
Baby corn
Courgette

Directions:
1. Preheat oven & a large pan of oil to 180 degrees
2. Marinade: finely dice all of the marinade ingredients add with all of the liquids, whisk together
3. Marinade steaks for 1 hour
4. Roast new potatoes at 180 degrees for 20 minutes then cover in miso paste and roast for a further 5 minutes
5. Mix tempura flour with soda water until you achieve your desired consistency and then mix in sesame seeds
6. Trim down the tender stem broccoli and spring onion, and coat all your vegetables in tempura flour
7. Shake off excess flour and then thoroughly coat with tempura batter then deep fry for 1.5 minutes
8. Oil and season your kale leaves and bake for 5 minutes, remove from the oven and leave to cool
9. Now we cook the marinated steak, heat a dry pan on a high heat. Add the steak to the hot pan, fry on one side for 1.5 minutes, flip over and repeat the process. (medium rare) Add the remaining marinade to the pan this will become your sauce, take the pan off the heat and spoon the sauce over the steak
10. Plate up the steak and vegetables then top with crispy kale, chopped parsley & garlic.
